Summer Squash Pie
Summer Squash Pie is an moderately easy dinner. Made with 2 c. whole wheat bread crumbs, 6 c. yellow summer squash or yellow zucchini, 1/2 c. chopped onion, 1 tbsp. oil and 2 large eggs, beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat bread crumbs into well oiled 9-inch pie pan.
Steam squash until tender; purée until smooth. (Should have about 3 cups purée.) Saute onion in oil. Purée the onion; eggs, cottage cheese, cornmeal, salt, Swiss cheese and dill weed.
Add to pureed squash.
Pour into crumb-lined pie plate.
Sprinkle finely chopped nuts. Bake 40 minutes or until done.
(Test with knife; done when it comes out clean.) Serves frozen, then warmed in microwave oven.
