Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 6 medium yellow squash, sliced in rounds, 1 medium onion, chopped, 2 slices bread crumbled, salt and pepper to taste and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. Cook squash in covered pan in small amount of water along with the onion; squash makes its own liquids; needs only enough water to get it started.
Cook until tender but not falling apart.
Drain and combine with bread, egg, salt, pepper, basil and half the cheese.
Butter 2-quart casserole.
Place the mixture in it and dot with butter.
Top with remaining cheese.
Bake in preheated oven at 375Β° for 30 to 40 minutes or until firm.
