Summer Pasta Salad
Summer Pasta Salad is an moderately easy dinner. Made with 1/2 lb. penne (about 2 c.), 3 tbsp. olive oil, 1/4 lb. mozzarella, diced (preferably fresh), 2 tbsp. red wine vinegar and 1/4 c. grated cheese (parmesan or romano), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook penne until just al dente.
Drain in a colander and rinse with cold water.
Drain again until very dry.
Place in a bowl and toss with olive oil.
Mix in Mozzarella, vinegar, Parmesan, tomatoes and basil.
Add salt and pepper.
Makes 8 side-dish servings.
