Summer Okra and Rice Casserole
Summer Okra And Rice Casserole is an easy dinner. Made with 1/2 lb. bacon, 2 medium onions, chopped, 2 c. okra, sliced or 16 oz. bag frozen okra, 2 c. cooked rice and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In large skillet, fry bacon over medium-high heat until crisp. Drain on paper towel, crumble bacon and set aside.
Reserve 1/2 cup of bacon grease.
Fry okra and onion over medium-high heat until brown but not dry.
Add rice and crumbled bacon, reserving some bacon for garnish.
Cook until thoroughly heated.
Serve from skillet or in casserole dish.
Garnish with crumbled bacon. Serves 4 to 6.
