Sue's Oyster Stew
Sue'S Oyster Stew is an moderately easy dinner. Made with 2 to 3 medium potatoes, diced, 2 carrots, sliced thin, 1 to 2 stalks celery, chopped, 1 qt. half and half and small to medium onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook potatoes and carrots (steaming them is best, using a microwave to do this is the fastest way).
Saute onions and celery in butter in pan.
Strain potatoes and carrots and add to pan. Add milk and ground pepper.
Heat to boiling point.
Add oysters. (Note
Oysters cook very quickly, so do not add them until you are ready to serve or turn the burner off after you add them.)
