Sue's Hominy Pudding
Sue'S Hominy Pudding is an moderately easy dinner. Made with 1 1/2 c. cooked hominy, 1 c. milk, 1/4 tsp. salt, 1 c. sliced peaches or apples, sweetened and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix hominy with eggs, milk, sugar, salt and sliced fruit. Place in a buttered, deep baking dish and sprinkle with nutmeg and cinnamon.
Set dish in a pan with 1/2 cup of water (the water should come halfway up sides of dish).
Bake in a preheated oven at 400Β° for 45 minutes.
(Test after 45 minutes with knife edge.
If knife comes out clean, pudding is done.
The center will set as pudding cools.)
