Stuffed Zucchini Squash
Stuffed Zucchini Squash is an moderately easy dinner. Made with 6 medium sliced zucchini, 3 c. soft bread crumbs, 1/2 c. parmesan cheese, 1 small onion, minced and 3 tbsp. minced parsley, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash zucchini, cut off ends, do not pare.
Cook zucchini in boiling salted water 5 minutes.
Halve zucchini lengthwise, remove pulp with spoon.
Save shells.
Combine pulp with bread crumbs, Parmesan cheese, onion, parsley, salt, pepper and eggs.
Mix well. Fill zucchini shells with this mixture. Dot with butter and sprinkle with additional Parmesan.
Bake in a 350Β° oven for 30 minutes.
Yields 6 servings.
