Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1 lb. ground chuck, veal or turkey, 1/2 c. chopped onion, 1/2 c. sliced mushrooms, salt and pepper and thyme and marjoram to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash zucchini and cut off ends.
Boil in salted water for 10 minutes.
Cool and scoop out zucchini insides.
Saute onions, add meat and mushrooms and seasonings.
Brown mixture, drain off fat. Remove from heat.
Add zucchini insides and 2 to 3 ounces of Parmesan cheese.
Fill the zucchini shells with this mixture.
Put in baking dish or pan.
Bake at 350Β° for 20 to 30 minutes.
Can be cheese of your choice to top, if desired.
