Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 2 medium zucchini, 1/2 c. cooked rice, 1/4 c. chopped onion, 1/4 c. chopped green pepper and 1 c. whole kernel corn, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut zucchini in half lengthwise.
Scrape out pulp, leaving a 1/4-inch shell.
Chop pulp and combine with rice, onion, pepper, corn, salt and basil.
Place zucchini shells in an 8 x 8-inch dish.
Mound 1/4 of vegetable mixture into each shell.
Top with chopped tomato.
Cover with waxed paper.
Microwave on High 5 to 7 minutes or until shells are tender, rotating dish 1/2 turn after 3 minutes or bake at 375Β° for 25 to 30 minutes in regular oven.
