Stuffed Zucchini
Stuffed Zucchini is an impressive dinner. Made with 2 medium zucchini, 1 medium onion, chopped, 2 tbsp. olive oil, 1/2 c. chopped, peeled tomatoes and 2 tbsp. capers (optional), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cut zucchini in half lengthwise.
Remove pulp, reserving 1/4-inch shells.
Chop pulp.
Saute onion and garlic in 2 tablespoons olive oil in skillet.
Stir in chopped zucchini. Saute 5 minutes.
Add tomatoes, capers, olives and seasonings. Cook over medium heat for 10 minutes, stirring occasionally.
Stir in bread crumbs and half the cheese.
Spoon into shells.
Top with remaining cheese.
Drizzle with 2 tablespoons olive oil.
Bake, covered, at 375Β° for 40 minutes.
Bake, uncovered, 10 minutes longer.
