Stuffed Baked Salmon
Stuffed Baked Salmon is an moderately easy dinner. Made with 1/3 c. oleo, 1/3 c. chopped onion, 1 tbsp. grated lemon rind, 1/4 c. lemon juice and 1 c. diced celery, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Melt butter in pan; saute celery and onion until tender, then toss with rice, lemon rind, salt, thyme and lemon juice.
This is enough to stuff a large salmon.
Sprinkle inside of fish with salt; stuff fish.
Spray foil and wrap fish in foil.
Prick holes in bottom.
Measure at thickest part of fish and bake in 450Β° oven, allowing 10 minutes cooking time for each inch of stuffed thickness.
Serve with lemon slice.
