Streamlined Cassoulet
Streamlined Cassoulet is an impressive dinner. Made with 1 large (1/2 lb.) onion, chopped, 2 large carrots, thinly sliced, 1 small red bell pepper, chopped, 3 cloves garlic and 1 (14 1/2 oz.) can stewed tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a 5 or 10-quart pan over high heat, combine onion, carrots, bell pepper, garlic and 1/2 cup water.
Stir often as vegetables begin to wilt.
Add more water if needed.
Continue to cook until vegetables are thoroughly softened.
Add tomatoes, broth, wine, thyme, bay leaf, pepper and liquid pepper; simmer covered for 45 minutes to blend flavors.
