Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 yellow summer squash, 1/2 c. salted water, 3 tsp. butter, 3 peeled tomatoes or 1 medium can and 1/2 c. green pepper, diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice and cook the squash in salted water until just tender (do not overcook).
Saute green pepper and onion in butter until tender.
Add tomatoes and cook 5 minutes.
Add sugar, flour, salt and pepper to tomatoes and cook until thickened.
Place squash in casserole, add tomato mixture.
Top with buttered bread crumbs and grated Cheddar cheese.
Bake 30 minutes at 350Β°.
