Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. (6 medium) squash, boiled 4 to 5 minutes, 2 eggs, beaten, 1 c. mayonnaise, 1 c. finely chopped onion and 1/4 c. green pepper, chopped fine, this recipe delivers authentic, satisfying flavors. Beat eggs.
Blend in mayonnaise, onion, green pepper and thyme.
Mix well.
Add to cooked squash.
Butter a casserole. Sprinkle cheese over top and dot with butter.
Put in fridge after it is covered with Saran Wrap.
Bake, uncovered, at 375Β° for 25 minutes or until lightly brown.
