Spinach-Roll Meat Loaf
Spinach-Roll Meat Loaf is an moderately easy dinner. Made with 2 lb. ground turkey or ground chicken, 1 chopped onion, 1/2 c. fresh chopped parsley, 1 tsp. minced garlic and 1 egg or egg substitute, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Omitting spinach for now, mix above ingredients well.
Spray a sheet of waxed paper with Pam or any vegetable spray.
Place meat mixture on paper and spread about 3/4-inch thick.
Press spinach on top of meat mixture.
Begin rolling mixture by lifting wax paper with both hands until meat rolls looks like a jelly roll (with spinach instead of jelly).
Pinch ends and place seam side down.
Sprinkle with paprika; score the top of the roll and place in baking dish or pan.
Bake, uncovered, in a 400° oven for 10 minutes.
Reduce heat to 350° after 10 minutes.
Bake for an additional 25 minutes.
Cover with a tent of foil, turn oven off and allow meat to remain in oven for an additional 10 minutes.
