Spinach Quiche
Spinach Quiche is an moderately easy dinner. Made with 1/2 c. butter or margarine, melted, 10 eggs, 1/2 c. unsifted all-purpose flour, 1 tsp. salt and 1 (10 oz.) pkg. frozen chopped spinach, thawed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 400°.
Place butter in a 13 x 9-inch pan in warm oven just to melt, about 3 minutes.
Beat eggs in a large bowl.
Mix in flour, baking powder and salt.
Squeeze thawed spinach very dry and add to egg mixture, along with melted butter, chilies and cheeses.
Pour mixture into pan and bake 15 minutes. Reduce heat to 350° and bake an additional 35 to 40 minutes.
Let stand 5 minutes to set.
Cut in 60 squares for hors d'oeuvres.
