Spinach Italienne
Spinach Italienne is an moderately easy dinner. Made with 1 lb. fresh spinach, 1/2 c. chopped olives (ripe or stuffed green), 1/4 c. grated parmesan cheese, 1/4 lb. sliced mozzarella cheese and 1 c. canned tomato sauce, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Clean spinach and discard stems.
Soak cleaned spinach in hot tap water for 10 minutes; drain.
Place spinach in a greased 9 x 12-inch baking dish.
Lay Mozzarella slices on top of spinach. Spread tomato sauce evenly over cheese.
Mix the oregano with the melted butter; brush bread slices on one side.
Cut bread slices into 1-inch strips.
Arrange, buttered side up, on mixture.
Bake, uncovered, for 30 minutes at 350Β°.
Serves 6 to 8.
