Spinach Enchilada Casserole
Spinach Enchilada Casserole is an impressive dinner. Made with 1 1/2 lb. lean ground beef, 1 clove minced garlic, 1/2 c. chopped onions, pinch of salt and pepper and 2 tomatoes, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In skillet, brown first 4 ingredients.
Add the next 8 ingredients to the skillet; cover and simmer approximately 10 minutes.
Cut tortillas into quarters and dip into melted butter. Cover bottom of greased 9 x 13-inch pan with half of tortillas. Spoon half of beef mixture over tortillas.
Sprinkle with cheese, 1 1/2 cups.
Arrange rest of tortillas.
Spread with sour cream. Then rest of beef mixture.
Sprinkle rest of cheese.
Bake at 350Β° for 30 minutes.
