Spinach-Cheese Lasagna Rolls
Spinach-Cheese Lasagna Rolls is an impressive dinner. Made with 1/2 c. chopped onion, 1 clove garlic, minced, 1 tbsp. olive or vegetable oil, 1 (15 oz.) can whole leaf spinach, well drained and finely chopped and 1 c. low-fat ricotta cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook and stir onion and garlic in oil in medium skillet until tender.
Add spinach and cook over medium heat until mixture is very dry.
In medium bowl, combine spinach mixture, cheeses, egg, sugar and pepper.
Spread scant 1/2 cup mixture on each lasagna noodle and roll up lengthwise.
Place lasagna rolls, seam side down in greased 13 x 9-inch baking pan.
Cover; bake in preheated 350Β° for about 20 minutes.
Heat tomato sauce, mushrooms and herbs in small saucepan.
Spoon sauce onto serving plate.
Cut lasagna rolls into thirds; place cut side up on sauce.
Sprinkle with green onions.
