Spicy Beef And Vegetables is an impressive dinner. Made with 1 lb. beef top round steak, 3 tbsp. vegetable oil, 2 medium onions, sliced, 1 medium green pepper, cut in strips and 1 medium red pepper, cut in strips, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut beef across the grain into thin strips.
Heat 2 tablespoons oil in 10-inch skillet over medium heat; add onions, pepper, mushrooms, garlic and salt and cook, stirring occasionally, 10 minutes until vegetables are tender.
With a slotted spoon, remove vegetables to bowl.
Add remaining tablespoon oil to skillet; add beef and cook over medium-high heat, stirring frequently, about 3 minutes, until browned.
Add peanut butter, 1/2 cup water, soy sauce, crushed red pepper flakes and vegetables.
Stir until mixture is blended and heated through. Makes 4 servings.
