Spiced Rice with Almonds
Spiced Rice With Almonds is an moderately easy dinner. Made with 3 tbsp. slivered almonds, 2 tbsp. cooking oil, 1 medium onion, thinly sliced, 1 clove garlic, minced and 1 c. long grain rice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a medium saucepan, cook and stir almonds in hot oil until light brown; remove and drain on paper towels.
Add onion and garlic to saucepan.
Cook and stir until onion is tender, but not brown.
Stir in uncooked rice, cardamom, ginger, red pepper, cinnamon, cumin and nutmeg.
Cook and stir about 3 minutes to brown the rice.
Add chicken broth.
Bring to boiling; reduce heat.
Cover and simmer for 15 minutes; do not lift cover.
Remove from heat.
Let stand, covered, for 10 minutes.
Stir in almonds before serving.
Makes 4 to 6 side-dish servings.
