Spiced Carrot Soup
Spiced Carrot Soup is an moderately easy dinner. Made with 1/4 c. onion, minced, 1 tsp. butter, 5 medium carrots, thinly sliced (3 to 4 c.), 1/2 tsp. fresh ginger, minced and 2 c. summer soup stock, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Saute the onion in the butter until softened.
Add the carrots and ginger and cook an additional 2 minutes.
Add the soup stock and simmer for 15 minutes.
Whirl in a blender or processor until fairly smooth.
Add the juices and cinnamon, then blend again. Chill.
Garnish with orange peel and a mint sprig if desired. Serves 4 to 6.
