Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1/4 c. butter, 1 medium onion, 1/2 medium green pepper, chopped, 1 c. long grain rice (uncooked) and 2 c. stewed tomatoes (undrained), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat butter in a saucepan.
Add onion, green pepper and rice. Cook and stir over medium heat until lightly browned.
Add tomatoes, water, salt and pepper.
Mix well, bring to boil and cover tightly.
Reduce heat and simmer for 30 minutes.
Fry ground beef and add to rice mixture after 30 minutes.
Mix well.
Serves 2 to 3 people.
