Southwestern Pinto Beans
Southwestern Pinto Beans is an moderately easy dinner. Made with 2 1/2 c. dried pinto beans, 1/2 lb. bacon, cut up, 2 c. (2 medium) chopped onions, 3 garlic cloves, minced and 2 (8 oz.) cans tomato sauce, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Soak beans as directed on package. Do not drain. Cover and simmer beans for 3 to 3 1/2 hours or until tender.
In a large skillet, cook bacon, onions and garlic over medium heat until bacon is crisp. (Do not drain.)
Add bacon mixture, tomato sauce, chili powder, oregano, salt, pepper and cumin to beans. Stir well. Simmer, uncovered, an additional 20 to 30 minutes.
