Southwestern Gratin Eggs
Southwestern Gratin Eggs is an impressive dinner you can prepare in about 2 hours. Made with c. low-fat yogurt, . red bell pepper, finely chopped, . green bell pepper, finely chopped, . green onions, finely chopped (including 2 inches of green tops) and c. jalapeño monterey jack cheese, grated, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
On the day before
Drain yogurt through cheesecloth and refrigerate.
Chop peppers and onions and refrigerate.
Grate cheese and refrigerate.
Use 9 x 13-inch casserole.
Spray with Pam.
Spread chopped bell peppers, onions and grated jalapeño cheese.
In separate bowl, beat eggs, yogurt, milk, salt and pepper.
Pour over peppers, onions and cheese mixture.
Sprinkle the one cup grated Cheddar cheese over entire casserole.
Bake at 350° for 40 minutes.
Let cool ten minutes before serving. Serves 8 to 10.
