Southern Carolina Cornbread
Southern Carolina Cornbread is an moderately easy dinner. Made with 2 eggs, 2 c. milk, 1/2 c. butter or margarine, melted, 2 c. self-rising flour and 2 c. yellow cornmeal, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 425Β°.
Butter a 9-inch square baking pan. Lightly beat eggs with milk and butter.
Set aside. In another bowl, combine flour, cornmeal, sugar and chili powder.
Stir in milk mixture until combined.
Spread batter evenly into pan.
Bake 25 to 30 minutes or until top is golden brown.
Insert fork into center.
If it comes out clean, cool in pan.
Cut into pieces and serve.
