Souse
Souse is an moderately easy dinner. Made with 5 lb. pigs feet, cut into 1-inch pieces, 2 lb. pigs ears, cut into 1/2-inch pieces, 2 lb. pigs tails, cut into 1-inch pieces (optional), 1 small jar diced pimientos and 3 c. vinegar or more to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook the feet with water (to cover), salt, pepper and 1 cup vinegar for approximately 30 minutes.
Then add all other ingredients and cook until all meats are cooked to the degree of doneness desired.
Serves a crowd and is eaten with a fork as the feet will mostly cook off the bones.
This is extremely good served with Hoppin' Jack (black-eyed peas, rice and bacon ends), greens, candied yams, salad and corn bread.
