Sour Cream Lemon Pie
Sour Cream Lemon Pie is an moderately easy dinner. Made with 2/3 c. sugar, 3 tbsp. cornstarch, 1 c. milk, 3 large egg yolks and 1 tsp. finely grated lemon peel, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix sugar and cornstarch in medium pan.
Whisk in milk until smooth.
Add egg yolks and whisk until blended.
Stir in peel and juice.
Add butter.
Cook on medium heat, stirring constantly, 4 to 5 minutes or until thick.
Do not boil!!
Refrigerate until cool.
Fold in sour cream and put in 9-inch baked and cooled pie shell.
