Soft Pumpkin Cookies
Soft Pumpkin Cookies is an moderately easy dinner. Made with 1/2 c. granulated sugar, 1/2 c. packed brown sugar, 1 c. margarine or butter (soft), 1 c. canned pumpkin and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat oven to 350Β°.
Mix sugars and margarine in a large bowl. Stir in pumpkin, vanilla and egg.
Stir in remaining ingredients, except frosting and 1/2 teaspoon cinnamon.
Drop dough by rounded teaspoonful about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until light golden brown.
Mix frosting and 1/2 teaspoon cinnamon; frost cookies.
Makes 4 dozen.
