Smothered Chicken
Smothered Chicken is an moderately easy dinner. Made with 1 medium chicken, cut into 4 pieces and skinned (2 leg and thighs and 2 half-breast pieces; save back and wings for stock), 1/4 c. safflower oil, 1 large onion, sliced, 2 cloves garlic, minced and black pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In deep saucepan or Dutch oven, brown chicken parts in oil. Pour off excess oil; add onion, garlic and spices.
Cover chicken with water.
Cover pot and bring to a boil, then lower heat and simmer for approximately 2 1/2 to 3 hours.
Add carrots and peas. Cover pot; bring back to a boil.
Then lower the heat and simmer for another 20 to 30 minutes.
Makes 4 servings.
