Smothered Chicken
Smothered Chicken is an moderately easy dinner. Made with 8 chicken thighs, skinned, or other pieces, salt and freshly ground pepper, 2 eggs, lightly beaten, 2 c. saltine cracker crumbs (approximately) and 1/4 c. butter (2 tbsp. plus 2 tbsp.), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Season chicken thighs with salt and pepper.
Dip in egg and roll in cracker crumbs.
Saute until golden in 2 tablespoons butter.
Add remaining butter as you turn pieces over; saute until golden on second side.
Combine onion soup and water; pour over chicken.
Reduce heat, cover and simmer until chicken is cooked, about 30 minutes.
Serve with rice or noodles.
