Shrimp Creole
Shrimp Creole is an moderately easy dinner. Made with 1/4 lb. butter, 1 medium onion, chopped, 1 green pepper, chopped, 3 stalks celery, chopped and 1 (14 oz.) can tomato purée, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Melt butter in a saucepan.
Add onion, green pepper and celery and saute until vegetables are soft.
Add tomatoes, purée, spices, sugar, wine and shrimp.
(Shrimp cooked in shells have extra flavor from a thin layer of fat between shells and the meat.) Cook over medium heat for 20 minutes.
Makes about 8 cups.
Can be served over rice.
