Shrimp Creole
Shrimp Creole is an moderately easy dinner. Made with 2 lb. medium shrimp in shells, 2 tbsp. butter, 1/2 large onion, diced, 2 cloves garlic, diced and 3 to 4 scallions, cut crosswise, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Shell and drain shrimp.
Place shells in water to make stock.
Put shrimp aside.
In a large skillet, brown butter.
Add flour and stir to make paste.
Brown onions, green pepper and garlic in skillet with paste.
Drain stock from shells and add 2 cups of stock to skillet along with tomato paste.
Cook for 1 hour or until thick.
Add shrimp, parsley, scallions, salt and pepper.
Cook until shrimp are pink.
Serve over rice.
