Shrimp Creole
Shrimp Creole is an impressive dinner. Made with 2 lb. medium shrimp, 2 1/2 c. shrimp or clam stock, 1/2 c. chicken fat or peanut oil, 2 1/2 c. chopped onion and 1 3/4 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat fat; add onions.
Lower heat until onions are brown.
Add remaining onions and celery.
Add pepper and butter. Cook 5 minutes.
Add hot sauce, thyme, basil and 1/2 cup stock. Cover.
Cook over medium heat 5 minutes.
Add tomatoes; stir. Lower heat.
Simmer 10 minutes.
Stir in tomato sauce; simmer 5 minutes.
Add remaining stock and sugar; stir.
Simmer 15 minutes. Add shrimp.
Turn off heat.
Let stand 15 minutes.
Serve.
