Shredded Yams
Shredded Yams is an moderately easy dinner. Made with 2 lb. raw sweet potatoes, 1 gal. water, 1 tbsp. salt, 1 c. sugar and 1/2 c. white corn syrup, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Shred yams gallon added. Combine sugar, and water in a heavy saucepan and cook until a light syrup forms. Drain potatoes, rinse and pat dry. Place in a 12 x 6 x 3-inch Pyrex dish.
Pour pineapple juice over potatoes, then the cooked syrup.
Dot with butter.
Bake, uncovered, at about 40 to 50 minutes or until potatoes are translucent.
