Seafood Stuffed Zucchini
Seafood Stuffed Zucchini is an impressive dinner you can prepare in about 2 hours 24 minutes. Made with . cooked flaked fish or crabmeat, crushed garlic, c. seasoned dry bread crumbs, medium zucchini and c. tomato purée, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook garlic in 1/2 cup olive oil for 2 to 3 minutes. Add bread crumbs and stir to brown.
Remove from heat and add parsley, pepper and seafood.
Set aside. Cut squash in half lengthwise.
Scoop out center, chop and saute in 1/2 cup olive oil and onion. Add remaining ingredients and simmer for 15 minutes.
Pour into rectangular baking dish.
Stuff fish mixture into center zucchinis, arrange in tomato sauce. Bake at 375° until tender, about 30 minutes.
Serves 6 to 8.
