Seafood Roll-Ups
Seafood Roll-Ups is an moderately easy dinner. Made with 1 lb. flounder or sole, 1/2 c. shredded swiss cheese, 1 (2 1/2 oz.) jar sliced mushrooms, drained, 1/4 c. low-fat yogurt and 1 tbsp. chives, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Thaw fish, if frozen.
Cut fish into 4 portions.
Make 4 rectangles.
In a bowl, combine cheese, chives, pimento, salt and pepper. Spread the mixture on the fish. Roll up fillets around filling.
Place seam side down in a loaf pan that has been sprayed with nonstick vegetable spray.
Combine the bread crumbs and paprika.
Brush fish with the 1 tablespoon yogurt and sprinkle with the bread crumb mixture. Bake in a 350Β° oven for 20 to 30 minutes or until the fish flakes easily when tested with a fork.
