Seafood Chowder
Seafood Chowder is an impressive dinner. Made with 1/2 c. finely minced onion, 1/4 c. butter, melted, 2 c. chicken or fish stock, 1 c. chopped celery and 1 c. finely chopped carrots, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onion in butter for 3 minutes; add stock, celery, carrots, pepper, bay leaf and thyme.
Simmer gently 10 to 15 minutes.
Add fish; simmer 5 minutes.
Remove bay leaf. Make smooth of 1 cup milk and flour.
Add to hot mixture and cook, stirring, until thick. Stir in remaining milk, cream, crab meat and clams.
Serves 6.
