Scalloped Spinach is an moderately easy dinner. Made with 6 bacon strips, diced, 1/4 c. chopped onion, 1 (10 oz.) pkg. fresh spinach, chopped, 2 c. soft bread crumbs, divided and 2 c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In skillet, cook bacon until crisp; drain on paper towel.

Saute onion in drippings until tender.

Place spinach and small amount of water in saucepan; cover and cook until tender, approximately 8 minutes.

Drain well and place in large bowl.

Add onion, 1 1/2 cups bread crumbs, milk, eggs, margarine, salt and pepper; mix together.

Pour into a greased 2-quart baking dish.

Top with bacon and the remaining crumbs.

Bake, uncovered, at 350Β° for 50 to 60 minutes or until knife inserted near center comes out clean.

Makes 6 to 8 servings.
