Scalloped Eggplant

Peel eggplant and dice in small cubes.
Saute pepper and onion until tender.
Add tomatoes, eggplant, salt and pepper; cook 15 minutes.
Place in a casserole dish.
Melt oleo in a skillet. Add bread crumbs and stir.
Sprinkle bread crumbs over eggplant. Bake in a 350Β° oven for 15 minutes, or until eggplant is tender and crumbs are brown.
