Scalloped Eggplant
Scalloped Eggplant is an easy dinner. Made with 1 large eggplant, 1 c. buttered bread crumbs, 1 c. white sauce and grated cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Pare eggplant, cut in 1/4-inch slices.
Cook in salted water until tender, drain. Into 1-quart baking dish put a layer of eggplant, then a layer of white sauce, then a layer of buttered bread crumbs.
Do this until ingredients are used up.
Sprinkle grated cheese on top.
Bake at 350Β° for 20 minutes.
Serve hot.
