Salmon Patties
Salmon Patties is an moderately easy dinner. Made with 1 c. mashed potatoes with milk and butter, 1 (6 oz.) can salmon, drained, skinned and boned, 1/4 c. chopped onion, 3 saltine crackers, crushed and 1 tbsp. minced fresh parsley, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a medium bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well. Beat egg white until stiff peaks form; fold into salmon mixture. Shape into six patties.
Heat oil in skillet; fry patties over medium heat for 3 to 4 minutes per side or until lightly browned.
