Salmon Patties
Salmon Patties is an moderately easy dinner. Made with 1 (14 3/4 oz.) can pink salmon, undrained, 1/2 c. saltine cracker crumbs, 1/4 c. cornmeal, 1 large egg, lightly beaten and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Drain salmon, reserving liquid.
Remove skin and bones, if desired.
Flake with a fork and set aside.
Combine cracker crumbs and reserved liquid; let stand 5 minutes or until liquid is absorbed.
Stir in salmon, cornmeal, egg, salt and pepper.
Shape mixture into 6 patties.
Pour 1/4-inch oil into a large, heavy skillet.
Fry patties in hot oil over medium heat until browned. Drain patties on paper towel.
Yields 6 servings.
