Salmon Patties
Salmon Patties is an moderately easy dinner. Made with 2 large eggs, 1 can (15 oz.) red sockeye salmon, drained and flaked, 2/3 c. fine dry bread crumbs, 1/2 c. finely chopped onion and 2 tbsp. finely chopped parsley leaves, this recipe delivers authentic, satisfying flavors. In a medium bowl, beat eggs enough to blend.
Stir in salmon, 1/3 cup bread crumbs, onion and parsley, lemon juice, salt and pepper until well mixed.
Shape into 4 patties and coat with remaining bread crumbs.
These handle better if you refrigerate for at least 30 minutes before frying.
