Salmon Croquettes
Salmon Croquettes is an moderately easy dinner. Made with 1 (15 1/2 oz.) can pink salmon, drained, 1 medium onion, peeled and finely chopped, 3 tbsp. margarine, melted, 1/4 c. finely crushed saltines and 2 tbsp. self-rising flour plus some for coating, this recipe delivers authentic, satisfying flavors. Remove skin and bones from salmon; flake salmon with a fork. Saute onion in margarine until tender; remove from heat and stir in salmon and everything else but the oil.
Form into 1 x 1 x 2 1/2-inch croquettes or small balls.
Coat with additional flour and deep fry in hot oil (375Β°) until golden brown.
Drain.
