Salmon Ball
Salmon Ball is an moderately easy dinner. Made with 1 lb. can red salmon, 1 (8 oz.) pkg. cream cheese, 2 tbsp. freshly squeezed lemon juice, 3 tsp. grated onion and 2 tsp. horseradish, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain salmon; remove and bones, then flake with fork. In small bowl, mix cream cheese; blend in lemon juice, onion, horseradish, salt, Worcestershire sauce, cayenne pepper and liquid smoke (this is important). Check seasonings; might need more salt.
Combine pecans parsley and spread on sheet of waxed paper.
Turn salmon out onto this mixture and turn this way and that until all sides are coated.
Wrap in waxed paper and chill thoroughly before using.
The spread will spread nicely when chilled.
