Saint Andrew's Night Shortbread
Saint Andrew'S Night Shortbread is an easy dinner. Made with 1 c. sugar (varied as low as 1/2 c.), 1/2 lb. butter or oleo (or 1 stick of each) and 1 lb. flour (about 2 c., more or less), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cream the sugar and butter at room temperature with hands until smooth.
Add flour, kneading and blend until dough comes away from sides of bowl.
Press out with fingertips on ungreased, floured cookie sheet.
Prick with fork.
Bake in preheated 350Β° oven about 35 minutes or until golden brown.
Cool, but cut in squares while still hot.
