Russian Borscht
Russian Borscht is an moderately easy dinner. Made with 3 lbs. beef (preferred) or chicken, 3 qts. water, 1 lg. onion, sliced, 2 medium beets, finely sliced and 3-4 ripe tomatoes or 1 size 1 can of tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a very large pan, slowly boil meat and onion in water for about an hour.
Add thinly sliced beets and boil 1/2 hour.
Add tomatoes, carrot, celery and parsley, and boil 1/2 hour.
Add Italian spinach and potato, and salt and pepper to taste.
Boil until potato is done and serve.
