Rowena's Curry Chicken
Rowena'S Curry Chicken is an impressive dinner. Made with 1 (3 1/2 lb.) broiler-fryer, cut up, flour for coating, 1/4 c. salad oil, 2 garlic cloves and 2 medium onions, thinly sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Coat chicken and brown in oil; remove.
In drippings over medium heat, cook garlic, onions, green pepper, celery, curry and salt for 5 minutes.
Stir in tomatoes and raisins.
Add chicken. Cover and simmer until chicken is done, about 45 minutes.
Brown almonds in butter, shaking skillet occasionally.
Sprinkle almonds and parsley over chicken.
Serve with hot rice or noodles.
