Roman Style Peppers
Roman Style Peppers is an moderately easy dinner. Made with 4 large bell peppers, 1 small onion, sliced fine, 1 tbsp. olive oil, 3 tomatoes, peeled and chopped fine and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut peppers in halves; remove stalks and seeds and cut into thin slices.
Place onion and oil in skillet and simmer until transparent.
Add tomatoes and cook 5 minutes.
Add peppers, salt and pepper; cover and cook slowly 30 minutes, adding water if necessary, stirring frequently.
Serves 4.
